Around the station for simplicity and an early shinkansen.
Korinbo and Katamachi to be within walking distance of the market, the garden and the restaurants, which spares you the most bus rides if you are staying two nights or fewer and want the old town on your doorstep.

Kanazawa is not a hot-spring town, and the ryokan here are not the mountain kind. What the city has is a handful of machiya townhouses, and they are the first thing to go.

The old houses of Higashi Chaya and Nagamachi are townhouses, usually rented without meals and sometimes whole. Do not expect the half board and the fixed dinner slot of Hakone or Kinosaki: that model belongs to hot-spring towns, and Kanazawa is not one. What you are paying for here is the building and the street it stands on.
The city has few beds for a lot of visitors, and the old houses are the smallest part of that stock. They go first, often well before the new hotels around the station, and the gap between booking opening and nothing being left is among the shortest in the country.
We never recommend an address. Three questions settle it here: whole house or single room; how far you are willing to walk after dinner, since the old districts empty out early; and whether you need a bed at all on a festival weekend, when the answer may be Toyama or Takayama instead.
